This series boasts blades made of ultra-premium steel for unsurpassed sharpness. The blade of this Miyabi knife is constructed of micro-carbide powdered MC66 steel, which is ice-hardened to a very impressive 66 on the classic Rockwell hardness scale. The result is an exceptionally sharp and long-lasting edge that is also highly corrosion resistant. The authentic, thin, genuine Japanese profile blades are wrapped in 132 additional layers of steel, resulting in a beautiful flower Damascus pattern. The sharpening is done using the traditional, three-step Honbazuke method.
The exquisite handle of the Miyabi Black series is made from the unique and prized Bigleaf maple and dyed to a black ash color. The grain and the color of the black ash contrasts beautifully with the Damascus steel pattern of the sharp blade. The handle is made in a traditional "D" shape, with a rounded spine and heel, providing perfect ergonomics for fatigue-free cutting. Handcrafted in the town of Seki, Japan.
